Recipe of the Week: Green Pepper Soup
This week's winning recipe comes from Aneida McDermott of Crystal Lake, who will receive a free 30-minute foot detox session provided by Dynamic/Superior Health in Crystal Lake.
Green Pepper Soup
3 pounds lean ground beef
3 medium green peppers, seed and diced
2 large yellow onions, peeled and diced
1 46-ounce can tomato juice
3 tomato juice cans of water
1 28-ounce can diced tomatoes with liquid
2 to 3 tablespoons Worcestershire sauce
Salt and pepper to taste
1 cup uncooked rice
Shredded cheddar to top
Brown the ground beef and drain the excess fat.
Add green peppers and onions and cook until soft.
Add the remaining ingredients except for the cheese and stir well.
Cover and simmer until rice is cooked.
Serve in large soup bowls topped with shredded cheese.
